Today, we are thrilled to share with you a very special project: I Tre Cippi, our new winery, founded in 2023. This adventure stems from a deep desire to express the authentic character of Maremma, a region in Tuscany, Italy. But more on that later…
We are excited to introduce you to our first wine, Burrasca, a 100% Ciliegiolo rosé from the 2023 vintage.
Burrasca is produced in Sorano, in vineyards located partly on soils rich in clayey skeleton and partly on tuffaceous soils. The cool climate, with significant temperature variations, leads to the ripening of grapes with a particularly rich aromatic profile. These grapes are harvested in early September, slightly early, to preserve the right degree of freshness that a good rosé requires.
The clusters are selected in the vineyard and then gently pressed at a controlled temperature. The free-run must is then vinified in white.
Ciliegiolo, traditionally used in blends to enrich the fruity aromas of Tuscan reds, has also shown a distinctive character when vinified in purity. In this case, it fully expresses its fresh notes of cherry and red fruits, revealing a balanced and elegant structure.
Pleasantly fresh and fruity, it is a wine that offers a wide range of pairings, ranging from white game meats to crustaceans, from cheeses to aged cured meats.
Burrasca stands out for its light, delicate, and agile character. On the nose and palate, notes of cherry, sour cherry, citrus and unripe plum emerge, accompanied by slight spicy nuances. It is a wine that offers a perfect balance between freshness and aromatic complexity.
We produce wine in very limited quantities; in 2023, only 1,000 bottles were made, distributed exclusively through direct contacts and not available in wine shops or on the general market. This is because for us it is important to work in respect of the land and the plants, which we care for with attention and respect.
The winemaking process takes place without the use of chemicals or invasive practices, and the grapes are harvested manually, selecting only the best bunches. Each bottle produced tells a story of dedication, respect for nature, and love for tradition, combining innovation in processing with the tradition of historic vineyards.
For us, making wine is a serious business! But even for fun, you can do things well, do good things, decide to represent a friendship, yourself and the territory you belong to through the culture of wine.
I Tre Cippi, belong to different worlds, different lives, different contexts from those of winegrowers, but not completely… I personally can say that I have Maremmane origins, having spent 45 years of my life there. Here I have been working for over 20 years in hospitality, marketing and various entrepreneurial activities related to the tourism sector. After meeting my two partners: Filippo of Marche origin but now Milanese DOC, Bocconi and then a healthy and brilliant gift, that of knowing how to see and create value in things and Matteo the Master of property management of one of the most beautiful corners of Sardinia and the World, the coast of Baunei!
This is how I Tre Cippi was born, different lives united by the passion of making dreams come true, for the traditions of our beautiful country, the wildness that remains, beautiful things in general and the Sea, but also the desire to preserve the historical and cultural heritage of local winemaking and the desire to innovate, giving life to a project that combines respect for traditions with a modern approach to wine production.
Decisions were made quickly, depending on small coincidences that helped us chart this new course. A rendezvous with friends in a hidden Fortress among the Maremmane countryside, a thermal bath during a thunderstorm, a more or less improvised dinner and here I Tre Cippi and our first Wine were born, which they already say is a legend, Burrasca!
