We like to define our cuisine as traditional with a modern twist—healthy gastronomy that never compromises on the quality of the products we cook with every day. We don’t consider ourselves a gourmet restaurant, nor a traditional place in the classic sense. The purchase of raw materials for a restaurant makes the difference between success and failure, not only economically but especially for the restaurant’s reputation. For us, this holds even more value: our purchasing decisions have always been driven by the desire to support and promote our territory. We dedicate ourselves to its promotion, helping to spread and appreciate the region’s excellences.
L’EnoRistrò, the restaurant of the Fortress, aims to be a reference point for presenting the best agro-food productions from the Città del Tufo region to all our guests and visitors, offering healthy and uncompromising gastronomy. The selected products come to life in seasonal menus that combine the authentic flavors of tradition with modern reinterpretations. Each dish is revisited just enough to enhance it and present it in the best way to the public, who, upon arriving in the area, may not be aware of the value of the local products.
Today it stands as a unique area in Tuscany because it is free of pollution sources and can therefore be described as naturally organic! Here, without needing excessive certifications, the quality of the products is simply the best that Tuscany can offer—one just needs to be attentive, and that’s what we do. We select those producers who are able to take advantage of this opportunity without facing the challenges of a land characterized by small plateaus separated by deep valleys, making cultivation more complex than in other areas.
Vines, olives, legumes, grains, and vegetables are cultivated in volcanic soil rich in unique minerals like Zeolite, which give the products distinctive characteristics. To give some examples, the white wines produced in these areas, thanks to the minerals and modern winemaking techniques, can be aged and not necessarily consumed within one or two years after bottling. Legumes like lentils and chickpeas can be cooked directly without needing to be soaked the day before.
All of this will be presented to you by our staff when you arrive at the EnoRistrò restaurant. Each dish has a story behind it—the story of the producers who, as we mentioned, have chosen to dedicate their lives to bringing the tradition into the future through their products, and we are happy to share it with you.
We are working to present new dishes that reflect even more the authenticity and freshness of local products, for a gastronomy that is ever more in tune with tradition. But that’s not all… we are also planning a new setting that will make the experience at EnoRistrò even more special. We don’t want to spoil too much… but rest assured that we are excited and can’t wait to show you all the surprises we have in store!
